Acclaimed Austin hospitality group grills up first Pearl restaurant

Need more proof that the San Antonio dining scene is the next big thing? One of Austin’s most prestigious hospitality groups is moving to Alamo City with its first local concept. According to a statement, Ladino is to settle in the Pearl by summer 2022.
The upcoming eatery comes from the Emmer & Rye Hospitality Group, the company behind some of the capital’s most acclaimed restaurants, including Emmer & Rye, Hestia, Kalimotxo, TLV, Henbit and the recently opened Canje. Ladino is located at E. Grayson St. 200, Suite 100 – the former location of Andrew Weissman’s much-missed Pearl pioneer Il Sogno Osteria.
True to the Sephardic roots of head chef Berty Richter, Ladino is called a “Mediterranean grill house”. The focus of the menu is cooking on the fire with freshly prepared pita, regional specialties, mezze and plenty of vegetables. The dessert adds a modern twist to some of the region’s most popular dishes.
In keeping with the theme, the name of the Jewish-Spanish language is borrowed from Richter’s youth – a mixture of Castellano, French, Italian, Greek, Turkish and Hebrew. The name not only honors the food of the chef’s formative years, but also pays tribute to the influence of the surrounding cultures.
“For most of my culinary career, I wanted to develop a concept like this and share my vision of Mediterranean cuisine, influenced by my Sephardic roots and traditions, and tell a story that has never been told here in Essen, Texas,” explains Richter in a message.
The addition continues a period of explosive culinary growth for the Pearl. Two upscale concepts debuted in 2020: the French restaurant Brasserie Mon Chou Chou and the Pan-Asian eatery Best Quality Daughter. The popular tourist destination has also redesigned the Bottling Department’s Food Hall with the recently added vendors Chilaquil, Mi Roti, and Kineapple. Allora and Arrosta, two Italian concepts from the San Antonio-based Maverick Restaurant Group, are due to open in the nearby Credit Human and Oxbow buildings by the end of the year.
Ladino continues Pearl’s curated approach, adding another layer of culinary variety to the food in Alamo City. And it will surely get rid of preconceived notions that San Antonio is just a Tex-Mex and grill town.
“The vision of Emmer & Rye Hospitality Group and Chef Berty is so compelling, and we believe this concept will greatly enrich the culinary communities of Pearl and San Antonio as a whole,” said Elizabeth Fauerso, Pearl’s chief marketing officer, in a press release . “Ladino as a manifestation of Berty’s culinary upbringing and expertise is representative of our endeavors to deeply connect us through food and culinary stories.”
