Mitch Austin was named Executive Chef at the Four Seasons Hotel Los Angeles in Beverly Hills and oversees all dining facilities including the Culina Ristorante, Windows Lounge, Cabana Restaurant, in-room dining and banquets.
Mitch discovered his culinary passion at a young age, spending his weekends cooking in the kitchen with his mother and uncle for family gatherings and parties.
After graduating from Santa Barbara’s Culinary Arts and Hotel Management School, Mitch Austin began his career as a chef for several award-winning restaurants, including the San Ysidro Ranch, where he learned about traditional California coastal cuisine. It wasn’t long before his love and passion for the flavors of Southern California brought him to Four Seasons Hotels and Resorts, and in 2010 Mitch moved to the Four Seasons Hotel Westlake Village to continue his career.
While at the Four Seasons Hotel Westlake Village, Mitch participated in a variety of culinary projects at the California Health and Longevity Institute, including wellness cooking classes with Paulette Lambert, who taught guests cooking techniques and introduced them to healthy ingredients and fun wellness recipes . In addition to rolling sushi alongside Chef de Cuisine Masa Shimakawa from Onyx, Mitch has also further developed his culinary know-how under Executive Chefs Jesse Hanson and Alexander la Motte.
When Mitch got the opportunity to move to Los Angeles in 2017, he saw it as an opportunity to bring his aesthetic combination of elegance, warmth and culinary experience from the farm with him. With every dish he creates, Chef Mitch strives to be sustainable and seasonal with the aim of delivering a memorable dining experience while maintaining a fresh farm feel. Since joining the Four Seasons Hotel Los Angeles in Beverly Hills, Mitch has led several wellness programs, including an on-site vegan Matthew Kenney pop-up restaurant, and has been a strong influence on kitchen culture. Mitch has a hands-on approach, positivity, enthusiasm and openness that inspire his team to come together to achieve anything.
