Steakhouse chain unveils surprising new menu with plant-based dishes

The chic steakhouse chain Fleming’s is working to steer steakhouses towards a more inclusive menu and is leaving with a new summer experience that accomplishes that mission.
The chain, with 64 locations – including seven in Texas, including two in Austin – has launched a summery wine dinner experience that caters to all diet and lifestyle choices, according to a press release.
Let’s stop fumbling: they make vegetarian dishes.
These aren’t the usual, certainly great, side dishes – mashed potatoes, steamed broccoli, and the like – that steakhouses are known for.
It’s called Earth, Wine & Fire – clever! – and it’s a four-course meal that was developed in collaboration with Caymus Vineyards and is available in two versions: an earth version and a fire version. The courses on each menu are mirrored but made up of different ingredients.

The Earth version is a plant-based menu that highlights Fleming’s ability to prepare all types of meals, even meatless.

The Fire version is a land and sea based menu that features more traditional dishes like steaks.
Fleming’s chef, Jeremy Lett, suggests that life is more than steak.
“Guests don’t usually think of steakhouses when looking for vegetarian options, so we’re excited to introduce our latest plant-centric innovation with our Earth, Wine & Fire experience,” says Lett. “It is important to us to develop together with our guests as their needs and lifestyle change, and we have received an overwhelmingly positive response from guests on the plant-based menu.”
It won’t stop there.
“We are very much looking forward to putting our creativity to the test with further plant-oriented selections in the future,” says Lett.
Fleming’s suggests that you bring a group so you can see and enjoy both versions. Fleming’s also suggests that maybe this could open your mind to new foods – vegetable products – that you’ve never experienced before.
Maybe you throw that fork away and decide on the spot to go vegetarian. Fleming’s doesn’t suggest that, but it could happen.
The Earth, Wine & Fire dinner is available until September 1st. Earth is $ 70 and Fire is $ 90. You can dine for two or have a take-away dinner.

Earth: Burrata with tomato confit. Herb, garlic and tomato confit, spring mix, fresh coriander, parmesan crisp with lemon balsamic vinaigrette and coriander oil.

Wine accompaniment: Red Schooner Voyage 9 Malbec
Course 3

Earth: Fried portobello and cauliflower steak. Potato pulp with chimichurri and farro, asparagus and pickled onions with mushroom demi-ice cream.

Fire: filet mignon and bone marrow. A 6-ounce hand-cut filet mignon, mushroom demi-glace, and toasted crostini with farro, asparagus, and pickled onions.
Wine pairing: Caymus Vineyard Cabernet Sauvignon, Napa Valley

Earth and fire: orange and olive oil cake. Macerated blueberries with homemade lime Chantilly cream and cottage cheese.
