No bird is the word: Lucas Bradbury’s Project Pollo brings faux chicken goodness to the battle against Big Poultry
You know Z’Teja’s Southwestern Grill is already closing its recently opened arboretum, right? Well they are. Details of the exact reasons are not yet known at the time of going to press, but they are. And you know they’ll be opening another store at the Avery Ranch this fall, yeah? Because that’s true too. But what’s more important right now is that the company’s new and yummy spin-off called Woo Woo Burgers, which operates from its good place on West Sixth, is running a buy-one-get-one-for-free introductory deal that is End of this month. Yes, that’s a solid win. Suggestion: buy a burger for yourself and spoil a hungry friend …
Is some over the top vegan trying to give the bird the bird? “Our goal is to have 100 stores open by 2024,” said Lucas Bradbury, owner of the Pollo plant-based project, which opened its second chicken-focused restaurant this week at 2438 Anderson. “We want to push Chick-fil-A out of business,” says the worn-out entrepreneur. Sounds like an admirable destination to us, to be honest, and – with a homemade menu that includes delicious vegan “chicken” sandwiches, wraps and strips as well as lots of delicious side dishes (crispy tatters with cashew queso, mac ‘n’ cheese, etc.) – we think the man might have a chance …
So there’s another new company founded by Chef Breck McBride last year: Comal Fajita House, which specializes in fire-cooked fajita meat, vacuum-packed and ready to serve in just 15 minutes. Hear: “McBride sources USDA Choice Black Angus, Bavette, and organic heirloom chicken breasts from ranches such as 44 Farms and Cooks Venture Farms. All meats are raised without hormones and antibiotics, the beef and chicken are seasoned with Comal’s homemade dry grating, then smoked over oak for hours before searing on a red-hot steel plancha to get the perfect char. ”(The PR publication wants also that we’re telling everyone that the Texas folk duo Jamestown Revival is on the advisory board, but we can’t imagine why that makes a culinary difference. It’s really a headache more enjoyment of John Dowland’s laments when we do learned that Anthony Bourdain was also a huge fan of this 17th century lutenist? Even so, those two guys are dead, and we’re damn glad the Jamestown boys are still alive … so, um, yeah – fajitas! ) Note: Get the goods online via the Comal website or pick them up at 1108 E. 12., Tue.-Sat., 12 pm-6pm …

Whiskey is fine, but how about some wine? For example, how about some of William Chris Vineyards’ Texas Red Blend released for the winery’s Wanderer Series Relief Project II, with a mission to support and feed needy Texan families as they emerge from the pandemic and the recovering from devastating winter storms in Texas. This mixture was created in collaboration with the renowned sommelier Ali Schmidt from Emmer & Rye, contains 92% Cinsault and 8% carignan from the Texas High Plains and is “juicy and light with generous strawberry and cherry notes and a silky texture”. Serving suggestion: Drink up, do good and be happy …
