Raymie Fuentes is known for using some unconventional means to spread the gospel of his baking in good faith. After moving to the city in summer 2020, the pastry chef in Zilker Park briefly exchanged confectionery for Instagram followers. Then, last June, the new Emmer & Rye employee walked into the Royal Blue Grocery on Rainey Street and stated that they should start selling rainbow cakes to celebrate Pride Month. In fact, Fuentes went to work to create a seven-layer variety of almond that would only grace their baking box for a few hours before it sold out. Now his impromptu side project can be found in all six Royal Blue Austin locations, and he plans to expand into other specialty stores like Central Market and Whole Foods.
