RUSTON, La. (KNOE) – Staple Sandwich Co. is no ordinary food truck. Desi and Dianne Bourgeois came up with the concept to show how local ingredients can do amazing things.

Desi has been in the grocery business for nearly three decades.

“I’ve been in the professional grocery store since 1991 and I get paid to cook,” Bourgeois said.

The main concepts he uses come from his time as a corporate dining chef for a technology company in Austin, TX. The company used local ingredients to make sure the food was fresh.

Bourgeois stated, “These companies cared about how their employees experience food and farmers, and what they ate and how they ate.”

He tried farming in his Austin backyard and found that with the small lot he had, he could only imagine the problems farmers were having on a larger scale.

“We had problems with the water, we had problems with insects, we had problems with the heat,” said Bourgeois.

Now his food trucks Grown & Grazed and Staple Sandwich Co. are making sure to include local farm produce in their menu.

Bourgeois said: “Being part of it and knowing that I am helping them feed their family and their farm makes me feel good and makes me feel like I am contributing to my community.”
