How to order high-protein pasta

KP D’Orazio launched their pasta business, D’Orazio D’Pasta Co., in the Fall of 2019 at the Farmer George Farmers Market in Round Rock and quickly gained a following for their handmade pasta.
When the coronavirus pandemic broke out, she moved business online, where she now sells six different pasta flavors and 12 different shapes made from high-protein semolina flour.
“The best cook I’ve ever known is my 91-year-old grandma,” says D’Orazio, who lives in Ohio and whose parents immigrated from Abruzzo, Italy. “She always made everything from scratch, just like her mother taught her. It takes her two days to make her meatballs.”

D’Orazio has also always enjoyed cooking and has learned some of her grandmother’s pasta techniques through visits over the years. “I started playing around with making pasta by adding fresh herbs that I had grown on my patio and my fiance loved it and thought I should try selling it.”
She sold her first 15 sachets in the farmers market and quickly expanded the number of noodles on offer, including gluten-free options and a traditional red sauce. D’Orazio does not currently sell its products in farmers markets, but has customers across central Texas (and even outside of the state) who order the products for delivery.
“When I started making pasta, I made everything entirely by hand and rolled it out with my grandmother’s hand-cranked pasta roll,” she says. “We now have two commercial pasta machines that we can use to make the various shapes and flavors that we offer.”
