Andrew Kroeger met his friend and business partner Itaru Nagano while cooking at L’Etoile in Madison. After working with the ELM Restaurant Group in Austin for five years, Kroeger moved back to town a few years ago to open a restaurant with Nagano: Fairchild on Monroe Street.
Kroeger has a passion for handmade pasta, which he demonstrated on Thursday at Kessenich’s in Madison in an interview with food editor Lindsay Christians of the Cap Times. It’s the latest edition of Cooking with the Cap Times, and you can check it out here:
