Local veteran working to revitalize downtown Copperas Cove with food truck park

Soon, vacant land will be the newest attraction in Downtown Copperas Cove, the Taste of Cove Food Truck Park.

“We get to know the food trucks on both sides. The pavilion will be the focus, ”said owner Tasha Roberts.

There isn’t a great variety of food here at Copperas Cove. Food truck parks are all the rage right now.

The food truck owner and veteran said the park will feature eight food trucks, covered outdoor seating and a drop-down screen showing local soccer games and family movies.

“This is a great community and I thought it would be a great thing for the citizens of that community to bring something like this here,” said Roberts.

Other local food trucks are already looking forward to the new venue.

“I think it will be something new for the church. There is no such thing in the city. I think it will be something and people will come, ”said Armando Gomez, owner of the Smoke Out Food Truck.

Roberts said she was reluctant to put her idea into action, but she realized if she could serve her country as a staff sergeant in the Army and work for the Army Reserve Officers’ Training Corps at the University of Texas at Austin, then she can it step up offers a space in which the community comes together.

After the city’s approval, construction is to proceed, which could take place in the next few months.
